I just made these awesome chicken salad sandwiches last weekend for Laura. She just had the sweetest little boy and is already running around town. From a C-section. What's that about Laura?
This is one of those recipes where there is no specific amount for anything but the dressing. Like lots of grapes? Add lots of grapes. This is exactly the way I cook.
Ingredients
Salad:
Chicken (you know, one of those packages--like 3-4 breasts)
Celery, cut into small pieces (I add almost an entire stalk. I really like celery)
Red seedless grapes, cut in half or quarters (I haaaate cutting grapes so I would say I add two cups)
Small can mandarin oranges
Dressing:
1 cup sour cream
1 cup mayo
1 Tbsp grated onion
1 Tbsp lemon juice
1-2 Tbsp Italian seasoning mix (I just add the whole package of Italian seasoning mix--found in the salad dressing aisle)
Directions
Combine salad ingredients. Combine dressing ingredients. Mix everything together. Now I only add about 1/2 to 3/4 of the dressing. I don't like things super dressing-y. Save the rest for people who drown their chicken salad in dressing (coughblakecough)
Serve on hamburger buns. Here's the important part. Serve topped with rice noodles If you can't find those, chow mein noodles are okay, but not as good.

For those of you who have not inflicted yourself on the Jacobson household for days (or, in my case, months and and months and months), and have not yet had the joy and wonder of experiencing this chicken salad, this is your chance!! This stuff is GREAT.

Ooooh Sharon had the best idea for this salad too! She made it into teeny individual sandwiches (what? for a bridal shower?) That woman is sooooo fancy! :-)
