Grilled Salmon Marinade

Photobucket

You guys, this marinade is so simple and so good. Even my in-laws, who have eaten their salmon plain for about 162 years agreed this was better. Go forth and marinade.

Ingredients:

1 1/2 pounds salmon fillets
lemon pepper, to taste
garlic powder, to taste
salt, to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

Season salmon fillets with lemon pepper, garlic powder, and salt.

In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.

Preheat grill for medium heat.

Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

How much brown sugar do you think the salmon actually absorbs? I eat salmon every day and I'm getting a little bored. This looks yummy, but I only eat 700 calories a day. 1/3 cup of brown sugar has, like, 5000.

Do you think it would taste good if I just used plain old Splenda or Stevia in place of the brown sugar?

If I could stomach sea food? I would totally trust your judgement and try this marinade. Just can't do seafood and either can Orange so we were a perfect match. Even your crystal clear, magazine quality photo made me almost gag!

sounds good.

My family loves salmon. We had it the other day. I wish I had this recipe then.

Jen,

Hell no--there are NO in-laws at my house.

Brandi,

I have now spent an insane amount of time researching this. You can use "rapadura" (some sort of cane sugar) honey (which you're supposed to cook a shorter amount of time) or sugar-free syrup.

AND apparently somewhere out there is "light brown sugar" (not the color, the calories) Sorry I couldn't find more!

Des,

Sorry for the gagging! I feel that same way about vegetables! HA!
